I was born in Brussels to a Belgian father and a Spanish mother. Our home was a blend of languages, aromas, and stories. But it was my abuela, my Spanish grandmother, who ignited my passion for cooking.

From a young age, I was captivated by her culinary artistry. She didn’t just cook; she told stories through her food. Her paella was a symphony of flavors, each ingredient playing its part. When I moved to the United States for my studies, I found myself alone in a new world. The kitchen became my sanctuary, a place where I could reconnect with my roots. I began experimenting, blending the flavors of my heritage with new influences. It was during this time that I discovered Cotija cheese—a crumbly, salty delight that reminded me of home. I learned that Cotija, originating from the town of Cotija in Michoacán, Mexico, is often used as a topping for dishes like tacos, elotes, and soups, adding a distinctive flavor and texture.
